There are a number of problems that can prevent grease traps from operating effectively.
Clog in Crossover
This occurs when FOGs and/or debris build up in the crossover line between the two compartments. If the crossover pipe is clogged, the liquid level in the first compartment will be too high while the level in the second compartment will be normal. The water may even be overflowing in the first compartment.
Clog in Incoming Line
A clog in the incoming line will quickly cause the lowest plumbing fixture in the restaurant to back up. Look for backed up floor drains. A backed up sink suggests that the branch line to that fixture is clogged as opposed to the grease trap incoming line.
Clog in Outgoing Line
If there is a clog in the outgoing line, the grease trap will overflow from both compartments. The clog may be in the line itself or in the city main. If you haven’t been pumping waste on cycle, the clog in the main may be your fault. Make sure to always dispose of waste water on cycle.
Full Grease Trap
A full grease trap results when grease has not been removed from the primary compartment in a timely fashion, causing it to spill over into the secondary compartment, and clogging crossover, incoming, and outgoing lines. To see if the trap is full, open the lid and use a pole to gauge the depth of the grease cap. If it reaches the bottom, then the trap is full. However, if you’re experiencing a grease trap problem, it’s usually not the case that the grease trap is full.

Wastewater lift stations are facilities designed to move wastewater from lower to higher elevation, particularly where the elevation of the source is not sufficient for gravity flow and/or when the use of gravity conveyance will result in excessive excavation depths and high sewer construction costs.

The pumps, electronic controls and electrical works are under constant physical stress, and the corrosive environment requires constant maintenance repair. There is, however, a point where they need to be rebuilt with wholesale equipment replacement. On average that is about every 15 to 25 years. For larger capacity pumps it is recommended to rebuild at least one pump a minimum of every two years. Performance of routine and preventative maintenance can save station's owner from costly repair bills.

The first thing that needs to be done before the actual cleaning begins is to set up the vacuum system by attaching the vacuum pipe to the truck’s intake hose. It is then placed in the storm drainage system. The water from the tanks will be used for jet-washing and flushing the drains all over. At the same time, the water is vacuuming up anything in the drain which helps clear the drain. After cleaning, the drain is labeled that it has been cleaned.

How does a grease trap work?

 
The first thing that you will notice when you install your grease trap is that it is not added directly to the drain of the sink or appliance that it is filtering. There is a flow control valve that keeps the water from reaching the grease trap too quickly before the trap itself. Another thing that may catch your eye is that there is no actual screen used to filter the FOG and debris out of the water.

 The distance between the drains and the grease trap is specifically used to cool the water on its way to the trap. As the water cools, there are two principles at work; the first is that food debris sinks, and the second is that FOG floats. The flow control will keep the water from washing the debris from the trap during times of faster flow.

 The grease trap is a well that keeps the floating oils at the top of the water from passing through by making the water fill the well. There is a wall that travels part of the way down the well on the input side so that the water needs to pass under it to exit through the drain. The FOG is blocked from traveling to the drain by the wall (because it floats), and the larger food debris sinks to the bottom of the trap and cannot travel up to the drain on the other side of the wall.

Vac-con trucks...

Pump Outs Unlimited has a fleet of trucks that have the capability to clean and vacuum mainline sewers, storm drains, wet and dry wells, lift stations, catch basin and storm drain culverts.
The fleet of combination trucks manufactured by VAC-CON typically equipped with 600’ of 1” diameter sewer cleaning hose capable of producing water pressures up to 2500 psi at 80 gallons per minute. Water tank capacity is up to 1500 gallons. Depending on the application, the trucks are equipped with positive displacement blowers or 3 stage fans in combination with 10 yard debris tanks. Sewer Lines

Clearing Clogged Sewer Lines

To clear a clogged sewer line, a nozzle with a forward jet is used. Forward jet only use a small proportion of the total GPM to bore through a blockage with a minimal loss of propulsion. The forward jet is design to bore into the blockage to allow the rear jets with more flow to remove the bulk or remainder of the blockage. Note that a forward jet may have reduced flow per orifice compared to the rear nozzle orifices; the pressure is always the same at all orifices.
